Premade Pancake Mix-Great For Busy Mornings

Breakfast is an important meal. It can set the tone for the day, whether you have the energy to chase the chickens back into the coop, or not.

Giving up weeding the garden because you have zero energy isn’t good, either. It’s important to get fueled up each day.

On the homestead, there isn’t always a lot of time for breakfast, however. Quick easy things like yogurt, baked oatmeal and eggs get old, too.

Having a hearty breakfast of pancakes is a great option, but the time they take? Not always on my schedule.

Having a premade pancake mix is great for when my kids want to have pancakes, too. It gives them the ability to make breakfast for the family, or even themselves.

We used to buy the boxed stuff at the grocery store to make life easier.

However, the premade mixes at the store are full of preservatives and other things you may not want your family to have.

Truly, it’s so easy to learn how to make pancake mix from scratch.

Ingredients

  • 12 cups of whole wheat pastry flour, or a combination of white/wheat
  • 2 Tablespoons of baking powder
  • 2 Tablespoons salt
  • 4 Tablespoons sugar (sucanat, organic cane juice, other dry form of sweetener)

Instructions To Make the Mix

  1. Mix the above ingredients and store in a tightly closed container.
  2. Store in a ziploc bag, or in a gallon sized glass jar.

How To Use the Pancake Mix

To use the pancake mix, add together:

  • 2 cups of the premade mix
  • 2 eggs
  • 2 cups milk (I normally use buttermilk)
  • 4 Tablespoons melted butter, or coconut oil
  1. Mix the wet ingredients together, and then mix in gently with the dry until just mixed.You will want your batter to be lumpy.
  2. Preheat your griddle and pour 1/4 cup per pancake.
  3. Cook until the cake looks dry on the edges and has bubbles all over the middle, approximately 1 minute.
  4. Flip, and cook another minute until cooked through.
  5. Serve with butter, peanut butter, maple syrup and/or fruit!

    1. Our local grocery store’s deli. If you ask, they usually will save the jars for you for FREE. The bakery dept. also will save their big buckets for FREE too 🙂

    2. I dont know if you are a pickle eater but they are some super great tasting pickles in huge jars, I think about a gallon size. I make my sun tea in the jars and find them at garage sales at times. They are great for storing many items in. I use my homemade laundry soap to wash them and that seems to get rid of the pickle smell out of them.

  1. Thank you for sharing your ideas & methods. I used to wonder if I could can milk that had already been processed and placed in plastic (yuk) jugs. Now I know I can, as well as butter. Thank you and share some more!

    PS: I just finished processing a batch of purple onions:
    Wash & boil jars ( I use 1/2 pints)
    add hot water to a small saucepan & drop lids to soften rubber seal
    Peal onions & cut in small chunks, precook in olive oil about 10 min & pack hot onions into the sterilized jars. Process in Pressure cooker 40 min at 10 lb pressure or 15 lbs or adjust for your higher altitude.

  2. Hi, great post, you have some great recipes on your website. However, I am a little confused???. The pre made pancake mix bought at the supermarket is no more convenient than making pancakes from scratch with raw ingredients. Although the modern recipes are a little more sophisticated, the good old fashioned recipe that we grew up with, having English mum, is self raising flour, milk, sugar and water. Vegetable oil or an egg can be added if preferred. Within 5 minutes the raw ingredients are mixed in a bowl with a fork, in the pan and cooking.

      I agree…the stuff at the supermarket is no more convenient than making it yourself. The point of THIS recipe, however, was to make it easy when you go camping, or for super busy mornings to have your older kids be able to make them lickety split.

      1. It is a good idea and great to hear that your kids know how to cook. Parents teaching thier kids to cook isnt something thats is often seen or heard of these days. There are many we have known in recent years who dont know how to cook even the simplest of meals. Its Funny you mention camping, my brother and I are currently on the road in Australia and as we have limited storage space we usually carry the raw ingredients in dry and dehydrated form ,including the full cream milk powder. There is nothing that beats camping and camp cooked meals.
