I love making this baked chicken!
It’s moist and delicious, with a crispy skin! You can use it to make a whole baked chicken, or use this recipe on chicken pieces that you get on sale.
- Chicken (use whole chicken or any pieces you want)
- mayonnaise-get the recipe to make your own here
- salt and pepper to taste
Homestyle Baked Chicken
First, scoop some mayo into a bowl, you don’t want to cross contaminate your mayo with raw chicken germs. That’s really gross, believe me. I used to work in a restaurant long ago, and cross contamination was the first and foremost thing on our minds daily.
Rub each piece with the mayo. You want to give it a good massage. After all, chickens are people, too 😉 Just kidding! But, you do want to make sure each piece is coated liberally. This is the “secret” to keeping the moisture in, while crisping up the skin.
Sprinkle liberally with paprika, salt and pepper all over both sides. This is a messy recipe, but it’s so worth it! Bake at 400° until juices run clear. About 1 1/2 hours for a whole chicken, or about 45 minutes for legs and thighs.
