What does a real meal mean to you?

Is it time with family and friends, and good food? To me, a real meal has to have good food, good company and perhaps a good bottle of wine or two. And, having people over for brunch is one of the best meals to share, in my opinion. It’s casual, non committal, and you can serve just about anything from muffins to eggs benedict. I have always enjoyed cooking, but there are just some things that I have had issues with perfecting in the past. For example, hollandaise.

I have a love-hate relationship with hollandaise. Truly.

I love the creamy, lemony sauce itself, but I can’t ever seem to get it right. Ugh! Bugs me to no end. I wasn’t sure what I was doing wrong, either. With the recipe from the book, And Here We Are At The Table Ariana explains how to make the perfect sauce. Sure, it works for her, but will it work for me?

First, get some water simmering.

Take an egg and whisk it in a small bowl. Place the bowl over a double boiler and add 1 tablespoon butter to melt. Whisk together quickly with a teaspoon of lemon juice. You want it to be more on the thinner side as it will thicken as it cools. The biggest thing is that you can’t leave it alone for a second. You should be whisking it constantly at this point.

And it worked!

I can totally make homemade hollandaise sauce now! I love her cookbook, And Here We Are At The Table, because not only does it have amazing, mouth watering recipes, it has beautiful pictures of her daily life as well. I especially enjoyed “walking” with her to get eggs from a local source and seeing the breathtaking views.

I am trying to put together a collection of recipes my whole family can enjoy but my daughter has Pancreatitis and must have a low fat diet and I’m allergic to milk and My mother is allergic to onions (even the smell) and egg yellows… tough to get 5 stars across the board around here 🙂
