Crockpot Peach Cake

Make this easy cake even more healthy by switching to Swerve sweetener!


  • 3 eggs separated
  • 3/4 cup Swerve
  • 1 tsp lime juice
  • 1/2 cup flour
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 3/4 cup plain yogurt
  • 1 cup dried fruit I used peaches


  • Begin by separating the eggs.
  • Add the whites to a mixer on medium high speed until stiff peaks form.
  • In separate bowl, beat the eggs, sugar, vanilla, salt, and flour until well blended.
  • Add in yogurt and mix well.
  • Fold in egg whites, 1/2 at a time.
  • Grease the inside of a crockpot with butter or coconut oil.
  • Add dried fruit to the bottom of the crockpot.
  • Pour the batter over the fruit.
  • Cook on low for 3-4 hours.
