BBQ Pulled Chicken Sliders (In The Instant Pot)

It is 5 PM and nearly dinner time. You forgot to take out some meat to thaw, and your budget won’t let you off the hook with another pizza delivery. AGAIN.

Hungry kids and your spouse come clamoring into the kitchen, begging for food. “We’re soooo hungry.” (Sure, as if they didn’t eat just a few hours ago.)

Still, you only have 3 frozen chicken breasts available for a meal, and you need to feed your family of 5. The math doesn’t add up, does it? Go ahead and check, I’ll wait.

The instant pot is an electric pressure cooker that is a work horse in the kitchen! They are truly a modern miracle for the busy family.

Why is the instant pot so wonderful?

You can take those frozen chicken breasts, add them to the instant pot, and in under an hour of total cooking time, have tender, juicy chicken that will melt in your mouth. WITHOUT having to turn on the oven or stand over the burners on the stove.

Simply place the meat in the instant pot, add your liquid, and “set it and forget it”. You can then turn your attention to your children’s homework, tossing in another load of laundry, or emptying the dishwasher.

With this easy method, there is no worry of burned food, overdone food, or chicken that will come out rubbery.

The pressure cooking makes the meat flavorful and juicy. The instant pot also gives off very little heat, making it the best thing since sliced bread in the summertime.
ingredients:

  • 3 chicken breasts
  • 1 cup chicken broth
  • 1 cup homemade BBQ sauce
  • 24 slider buns (dinner rolls work great here!)
  • 2 T. melted butter
  • 1 clove garlic, minced

Place the breasts in the instant pot, and cover with the chicken broth. Set on manual for 30 minutes. Allow to cool on it’s own.

When the pressure is relieved, as is indicated by the valve being “down”, then carefully remove the chicken to a cutting board or plate. It will be very hot. Shred with a fork.

You can also put the chicken and broth in the crock pot on low for 6-8 hours or on high for 3-4 hours. Alternately, you can also bake the chicken breasts at 400° in the oven for 30 minutes or until cooked throughout.

Turn the oven to 400° degrees. In a 9×13 pan, spray non stick spray or grease with butter. Add in 24 slider bun bottoms to the pan. Cover with the shredded chicken. Carefully spread the bbq sauce over the shredded chicken and add the slider buns on top.

Add the minced garlic to the melted butter and brush over the tops of the slider buns. Place in the oven and allow to bake for 20 minutes. Remove and cut carefully apart. Enjoy!
